A healthy version of classic oatmeal raisin cookies, packed with fiber and natural sweetness.
Ingredients

- 1 cup rolled oats
- 1/2 cup whole wheat flour
- 1/4 cup honey
- 1/4 cup raisins
- 1/4 cup coconut oil
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 egg
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C).
- Mix oats, flour, cinnamon, baking soda, and salt in a bowl.
- In another bowl, whisk honey, coconut oil, egg, and vanilla.
- Combine wet and dry ingredients.
- Fold in raisins.
- Drop spoonfuls onto a baking sheet.
- Bake for 10-12 minutes.
- Cool before serving.
Notes
- Store in an airtight container for up to 5 days.
- Substitute maple syrup for honey if preferred.
- Add nuts for extra crunch.
