Description

A healthy version of classic oatmeal raisin cookies, packed with fiber and natural sweetness.


Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup whole wheat flour
  • 1/4 cup honey
  • 1/4 cup raisins
  • 1/4 cup coconut oil
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix oats, flour, cinnamon, baking soda, and salt in a bowl.
  3. In another bowl, whisk honey, coconut oil, egg, and vanilla.
  4. Combine wet and dry ingredients.
  5. Fold in raisins.
  6. Drop spoonfuls onto a baking sheet.
  7. Bake for 10-12 minutes.
  8. Cool before serving.

Notes

  • Store in an airtight container for up to 5 days.
  • Substitute maple syrup for honey if preferred.
