Description

A hearty and flavorful lamb stew made with tender lamb pieces, vegetables, and aromatic spices.


Ingredients

Scale
  • 1 kg lamb, cut into chunks
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 cup peas
  • 4 cups beef or vegetable broth
  • 1 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add lamb chunks and brown on all sides. Remove and set aside.
  3. In the same pot, sauté onion and garlic until soft.
  4. Return lamb to the pot and add carrots, potatoes, peas, broth, tomato paste, thyme, rosemary, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours, or until lamb is tender.
  6. Serve hot.

Notes

  • For extra flavor, sear the lamb well before adding other ingredients.
  • Adjust seasoning to your taste.
  • You can add other vegetables like celery or turnips if desired.
