Description

A hearty beef stew with tender meat and vegetables in a rich broth.


Ingredients

Scale
  • 2 lbs beef chuck, cubed
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, cubed
  • 4 cups beef broth
  • 2 cloves garlic, minced
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp flour

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Brown the beef cubes on all sides, then remove from the pot.
  3. Sauté onions and garlic until softened.
  4. Add flour and stir for 1 minute.
  5. Pour in beef broth and bring to a simmer.
  6. Return beef to the pot, add carrots, potatoes, thyme, salt, and pepper.
  7. Cover and simmer for 2 hours until meat is tender.
  8. Serve hot.

Notes

  • Cut beef into even pieces for uniform cooking.
  • Adjust seasoning to taste.
  • Store leftovers in the fridge for up to 3 days.
