Ingredients

- 2 lbs chicken, cut into pieces
- 4 cups chicken broth
- 1 cup water
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 bay leaf
- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 2/3 cup milk
- 2 tbsp butter, melted
Instructions
- In a large pot, combine chicken, broth, water, onion, carrots, celery, garlic, salt, pepper, thyme, and bay leaf. Bring to a boil.
- Reduce heat, cover, and simmer for 30 minutes or until chicken is cooked.
- Remove chicken, shred it, and return to the pot.
- In a bowl, mix flour, baking powder, and salt. Stir in milk and melted butter to form a dough.
- Drop spoonfuls of dough into the simmering broth. Cover and cook for 15 minutes.
- Remove bay leaf and serve hot.
Notes
- Use leftover rotisserie chicken for a quicker version.
- Add peas or corn for extra vegetables.
- Store leftovers in the fridge for up to 3 days.
