Ingredients

- 1 whole turkey (12–14 lbs)
- 1 cup unsalted butter, softened
- 2 tbsp chopped fresh rosemary
- 2 tbsp chopped fresh thyme
- 2 tbsp chopped fresh sage
- 4 cloves garlic, minced
- 1 tbsp salt
- 1 tsp black pepper
- 1 lemon, quartered
- 1 onion, quartered
Instructions
- Preheat oven to 325°F (165°C).
- Mix butter, herbs, garlic, salt, and pepper in a bowl.
- Pat turkey dry and loosen skin over breast.
- Spread herb butter under and over turkey skin.
- Stuff turkey cavity with lemon and onion.
- Place turkey breast-side up on roasting rack.
- Roast uncovered for 3-3.5 hours until internal temperature reaches 165°F.
- Let turkey rest 30 minutes before carving.
