Ingredients

- 1 (3-4 lb) beef tenderloin, trimmed
- 1/4 cup Dijon mustard
- 2 tbsp olive oil
- 1/2 cup breadcrumbs
- 1/4 cup fresh parsley, chopped
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 3 garlic cloves, minced
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 425°F (220°C).
- Pat the beef tenderloin dry and season with salt and pepper.
- Heat olive oil in a skillet and sear the tenderloin on all sides.
- Brush the tenderloin with Dijon mustard.
- Mix breadcrumbs, parsley, rosemary, thyme, and garlic in a bowl.
- Press the herb mixture evenly onto the mustard-coated tenderloin.
- Place on a roasting rack and bake for 25-30 minutes or until desired doneness.
- Let rest for 10 minutes before slicing.
Notes
- Use a meat thermometer for accurate cooking.
- Adjust cooking time based on thickness.
- Substitute dried herbs if fresh ones are unavailable.
