Description

A succulent beef tenderloin coated with a flavorful herb crust.


Ingredients

Scale
  • 1 (3-4 lb) beef tenderloin, trimmed
  • 1/4 cup Dijon mustard
  • 2 tbsp olive oil
  • 1/2 cup breadcrumbs
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 3 garlic cloves, minced
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Pat the beef tenderloin dry and season with salt and pepper.
  3. Heat olive oil in a skillet and sear the tenderloin on all sides.
  4. Brush the tenderloin with Dijon mustard.
  5. Mix breadcrumbs, parsley, rosemary, thyme, and garlic in a bowl.
  6. Press the herb mixture evenly onto the mustard-coated tenderloin.
  7. Place on a roasting rack and bake for 25-30 minutes or until desired doneness.
  8. Let rest for 10 minutes before slicing.
