Description

A succulent rack of lamb coated with a flavorful herb crust, perfect for special occasions.


Ingredients

Scale
  • 1 rack of lamb (about 1.5 lbs)
  • 2 tbsp olive oil
  • 1 cup breadcrumbs
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp Dijon mustard

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Trim excess fat from the rack of lamb and pat dry.
  3. Rub the lamb with olive oil, salt, and pepper.
  4. Sear the lamb in a hot skillet for 2 minutes per side.
  5. Mix breadcrumbs, rosemary, thyme, and garlic in a bowl.
  6. Brush the lamb with Dijon mustard.
  7. Press the herb mixture onto the lamb.
  8. Place the lamb on a baking sheet and roast for 20-25 minutes.
  9. Let rest for 5 minutes before slicing.
