Ingredients

- 1 rack of lamb (about 1.5 lbs)
- 2 tbsp olive oil
- 1 cup breadcrumbs
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp Dijon mustard
Instructions
- Preheat oven to 375°F (190°C).
- Trim excess fat from the rack of lamb and pat dry.
- Rub the lamb with olive oil, salt, and pepper.
- Sear the lamb in a hot skillet for 2 minutes per side.
- Mix breadcrumbs, rosemary, thyme, and garlic in a bowl.
- Brush the lamb with Dijon mustard.
- Press the herb mixture onto the lamb.
- Place the lamb on a baking sheet and roast for 20-25 minutes.
- Let rest for 5 minutes before slicing.
