Ingredients

  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp dried oregano

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Pat chicken dry with paper towels.
  3. Mix all herbs and spices with olive oil to make a paste.
  4. Rub the paste evenly over the chicken.
  5. Place chicken in a roasting pan breast-side up.
  6. Roast for 1 hour 15 minutes or until internal temperature reaches 165°F.
  7. Let rest 10 minutes before carving.
