Ingredients

- 1 whole chicken (3–4 lbs)
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp dried oregano
Instructions
- Preheat oven to 375°F (190°C).
- Pat chicken dry with paper towels.
- Mix all herbs and spices with olive oil to make a paste.
- Rub the paste evenly over the chicken.
- Place chicken in a roasting pan breast-side up.
- Roast for 1 hour 15 minutes or until internal temperature reaches 165°F.
- Let rest 10 minutes before carving.

- Adjust cooking time based on chicken size.
- Check temperature at the thickest part of the thigh.
