Ingredients

  • 1 lb carrots, peeled and sliced
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss carrots with olive oil, salt, and pepper.
  3. Spread carrots on a baking sheet in a single layer.
  4. Roast for 20 minutes.
  5. Mix honey and Dijon mustard in a small bowl.
  6. Brush glaze over carrots and roast for 5 more minutes.
  7. Serve warm.
