Ingredients

  • 1 cup crushed pretzels
  • 1/4 cup honey
  • 2 tbsp Dijon mustard
  • 1 tbsp whole grain mustard
  • 1 egg
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix honey, Dijon mustard, and whole grain mustard in a bowl.
  3. In another bowl, beat the egg.
  4. Place crushed pretzels in a third bowl.
  5. Dip each chicken breast in the honey mustard mixture, then the egg, and finally coat with crushed pretzels.
  6. Heat olive oil in a skillet over medium heat.
  7. Sear chicken for 2-3 minutes per side until golden.
  8. Transfer to a baking sheet and bake for 15-20 minutes until cooked through.
  9. Serve warm.
