- 1 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/4 tsp ground ginger
- 1/2 cup vegetable oil
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 2 large eggs
- 1 cup pumpkin puree
- 1/4 cup water
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
- In a medium bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
- In a large bowl, mix oil, granulated sugar, brown sugar, eggs, pumpkin puree, and water.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Pour batter into prepared loaf pan.
- Bake for 60-65 minutes or until a toothpick inserted comes out clean.
- Let cool in pan for 10 minutes, then transfer to a wire rack.
Notes
- Use pure pumpkin puree, not pumpkin pie filling.
- Store cooled bread wrapped in plastic wrap at room temperature for up to 3 days.
- For extra moisture, add 1/2 cup chopped walnuts or pecans.
