- 1 lb beef stew meat, cubed
- 1 onion, diced
- 2 carrots, sliced
- 2 potatoes, cubed
- 2 cups beef broth
- 1 cup frozen peas
- 1 sheet puff pastry
- 2 tbsp flour
- 2 tbsp butter
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F.
- Brown the beef in a large skillet over medium heat.
- Add onions and cook until softened.
- Stir in carrots and potatoes.
- Sprinkle flour over the mixture and cook for 1 minute.
- Pour in beef broth and bring to a simmer.
- Add thyme, salt, and pepper.
- Cook until vegetables are tender.
- Mix in frozen peas.
- Transfer filling to a baking dish.
- Cover with puff pastry sheet.
- Bake for 25 minutes until golden brown.
Notes
- You can use pre-made pie crust instead of puff pastry.
- Let the pie rest for 10 minutes before serving.
- Add other vegetables like celery or mushrooms if desired.
