Ingredients

  • 8 oz pasta (penne or rotini)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black olives, sliced
  • 1/2 cup red onion, diced
  • 1/2 cup bell peppers, diced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup feta cheese, crumbled (optional)

Instructions

  1. Cook pasta according to package instructions. Drain and rinse under cold water.
  2. In a large bowl, combine cooked pasta, tomatoes, olives, red onion, bell peppers, and basil.
  3. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Pour dressing over pasta mixture and toss to coat evenly.
  5. If using, sprinkle feta cheese on top before serving.
  6. Chill for at least 30 minutes before serving.
