Description

A spicy and creamy casserole combining the flavors of jalapeño poppers with tender chicken.


Ingredients

Scale
  • 2 cups cooked chicken, shredded
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 4 jalapeños, diced (seeds removed for less heat)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup crumbled bacon
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup breadcrumbs
  • 1 tbsp melted butter

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix cream cheese, sour cream, mayonnaise, garlic powder, onion powder, salt, and pepper.
  3. Add shredded chicken, diced jalapeños, cheddar cheese, Monterey Jack cheese, and bacon. Stir until well combined.
  4. Spread mixture into a greased 9×13-inch baking dish.
  5. In a small bowl, mix breadcrumbs with melted butter. Sprinkle evenly over the casserole.
  6. Bake for 25-30 minutes until bubbly and golden brown.
  7. Let cool for 5 minutes before serving.

Notes

  • For extra spice, keep jalapeño seeds.
  • Substitute Greek yogurt for sour cream if desired.
  • Store leftovers in an airtight container for up to 3 days.
