A spicy and creamy casserole combining the flavors of jalapeño poppers with tender chicken.

- 2 cups cooked chicken, shredded
- 8 oz cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 4 jalapeños, diced (seeds removed for less heat)
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup crumbled bacon
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 cup breadcrumbs
- 1 tbsp melted butter
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, mix cream cheese, sour cream, mayonnaise, garlic powder, onion powder, salt, and pepper.
- Add shredded chicken, diced jalapeños, cheddar cheese, Monterey Jack cheese, and bacon. Stir until well combined.
- Spread mixture into a greased 9×13-inch baking dish.
- In a small bowl, mix breadcrumbs with melted butter. Sprinkle evenly over the casserole.
- Bake for 25-30 minutes until bubbly and golden brown.
- Let cool for 5 minutes before serving.
Notes
- For extra spice, keep jalapeño seeds.
- Substitute Greek yogurt for sour cream if desired.
- Store leftovers in an airtight container for up to 3 days.
