- 4 boneless, skinless chicken breasts
- 4 oz cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 2 jalapeños, seeded and finely chopped
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup breadcrumbs
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F.
- Mix cream cheese, cheddar, jalapeños, garlic powder, onion powder, salt, and pepper in a bowl.
- Cut a pocket into each chicken breast and stuff with the filling.
- Close the pockets with toothpicks.
- Coat chicken with breadcrumbs, then drizzle with olive oil.
- Bake for 25-30 minutes until chicken reaches 165°F.
- Rest for 5 minutes before serving.
