Ingredients

Instructions
- Wash and dry the kale thoroughly. Remove stems and chop leaves into bite-sized pieces.
- In a small bowl, whisk together olive oil, garlic, lemon juice, Dijon mustard, Parmesan cheese, black pepper, and salt to make the dressing.
- Massage the dressing into the kale leaves for 2-3 minutes to soften them.
- Let the salad sit for 5 minutes to allow flavors to blend.
- Top with croutons and extra Parmesan before serving.
