Description

Ingredients

  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 3 ripe bananas, mashed
  • 1/4 cup lemon juice
  • 1 tbsp lemon zest
  • 1 cup fresh blueberries

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a bowl, whisk flour, baking soda, and salt.
  3. In another bowl, beat butter and sugar until creamy. Add eggs one at a time.
  4. Mix in mashed bananas, lemon juice, and lemon zest.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  6. Fold in blueberries gently.
  7. Pour batter into the loaf pan and bake for 50-60 minutes or until a toothpick comes out clean.
  8. Cool in pan for 10 minutes, then transfer to a wire rack.
