Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken breasts with salt and pepper.
  3. Cook chicken for 5-6 minutes per side until golden brown and cooked through. Remove and set aside.
  4. In the same skillet, melt butter and sauté garlic for 1 minute.
  5. Add chicken broth, lemon juice, and lemon zest. Bring to a simmer.
  6. Return chicken to the skillet and spoon sauce over it. Cook for 2-3 minutes.
  7. Sprinkle with fresh parsley before serving.
