Ingredients

  • 4 cod fillets (6 oz each)
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Pat the cod fillets dry with paper towels.
  2. Season both sides with salt and pepper.
  3. Heat butter and olive oil in a pan over medium heat.
  4. Add garlic and sauté for 30 seconds.
  5. Place cod fillets in the pan and cook for 3-4 minutes per side.
  6. Squeeze lemon juice over the cod and sprinkle with zest.
  7. Garnish with parsley and serve immediately.
