Ingredients

- 2 boneless, skinless chicken breasts
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 lemon (zested and juiced)
- 2 cloves garlic (minced)
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup fresh parsley (chopped)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken with salt and pepper, then cook until golden and cooked through (about 6-7 minutes per side). Remove and set aside.
- In the same skillet, add garlic and sauté for 30 seconds.
- Stir in orzo and toast for 1 minute.
- Pour in chicken broth and bring to a simmer. Cook for 10 minutes, stirring occasionally.
- Slice the cooked chicken and return it to the skillet.
- Add lemon zest, lemon juice, and parsley. Stir well and serve.
Notes
- Use fresh lemon juice for the best flavor.
- You can substitute orzo with rice or quinoa if needed.
- Store leftovers in an airtight container for up to 3 days.
