Ingredients

- 4 bone-in, skin-on chicken thighs
- 2 tbsp olive oil
- 1 lemon, juiced and zested
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Mix olive oil, lemon juice, lemon zest, garlic, thyme, rosemary, salt, and pepper in a bowl.
- Coat chicken thighs with the marinade and let sit for 15 minutes.
- Place chicken thighs skin-side up on a baking sheet.
- Bake for 35-40 minutes until golden brown and internal temperature reaches 165°F (74°C).
- Let rest for 5 minutes before serving.
Notes
- For crispier skin, broil for the last 2-3 minutes.
- Substitute fresh herbs if available.
- Serve with roasted vegetables or rice.
