Description

A classic dessert with a tangy lemon filling and fluffy meringue topping.


Ingredients

Scale
  • 1 1/2 cups sugar
  • 1/4 cup cornstarch
  • 1/4 tsp salt
  • 1 1/2 cups water
  • 3 egg yolks
  • 2 tbsp butter
  • 1/2 cup lemon juice
  • 1 tbsp lemon zest
  • 3 egg whites
  • 1/4 tsp cream of tartar
  • 6 tbsp sugar

Instructions

  1. Preheat oven to 350°F.
  2. Mix sugar, cornstarch, and salt in a saucepan.
  3. Stir in water and cook over medium heat until thickened.
  4. Beat egg yolks and gradually mix in hot filling.
  5. Return to heat and cook for 2 more minutes.
  6. Remove from heat and stir in butter, lemon juice, and zest.
  7. Pour filling into baked pie crust.
  8. Beat egg whites with cream of tartar until soft peaks form.
  9. Gradually add sugar and beat until stiff peaks form.
  10. Spread meringue over filling, sealing edges.
  11. Bake for 12-15 minutes until meringue is golden.

Notes

  • Use fresh lemon juice for best flavor.
  • Cool pie completely before slicing.
  • Store leftovers in refrigerator.
