Ingredients

- 1 1/2 cups sugar
- 1/4 cup cornstarch
- 1/4 tsp salt
- 1 1/2 cups water
- 3 egg yolks
- 2 tbsp butter
- 1/2 cup lemon juice
- 1 tbsp lemon zest
- 3 egg whites
- 1/4 tsp cream of tartar
- 6 tbsp sugar
Instructions
- Preheat oven to 350°F.
- Mix sugar, cornstarch, and salt in a saucepan.
- Stir in water and cook over medium heat until thickened.
- Beat egg yolks and gradually mix in hot filling.
- Return to heat and cook for 2 more minutes.
- Remove from heat and stir in butter, lemon juice, and zest.
- Pour filling into baked pie crust.
- Beat egg whites with cream of tartar until soft peaks form.
- Gradually add sugar and beat until stiff peaks form.
- Spread meringue over filling, sealing edges.
- Bake for 12-15 minutes until meringue is golden.
Notes
- Use fresh lemon juice for best flavor.
- Cool pie completely before slicing.
- Store leftovers in refrigerator.
