Description

Classic lemon poppy seed muffins with a light texture and bright citrus flavor.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tbsp poppy seeds
  • 1 tbsp lemon zest
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/4 cup fresh lemon juice
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 375°F. Line a muffin tin with paper liners.
  2. Whisk flour, sugar, poppy seeds, lemon zest, baking soda, baking powder, and salt in a bowl.
  3. In another bowl, mix melted butter, eggs, sour cream, lemon juice, and vanilla.
  4. Combine wet and dry ingredients. Stir until just mixed.
  5. Divide batter evenly among muffin cups.
  6. Bake for 18-20 minutes until golden and a toothpick comes out clean.
  7. Cool for 5 minutes, then transfer to a wire rack.
