Description

A moist and flavorful bread combining zucchini and lemon for a refreshing taste.


Ingredients

Scale
  • 1 1/2 cups grated zucchini
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a bowl, whisk flour, baking powder, baking soda, and salt.
  3. In another bowl, beat eggs, oil, sugar, lemon zest, and lemon juice.
  4. Fold grated zucchini into the wet mixture.
  5. Gradually mix dry ingredients into the wet mixture until combined.
  6. Pour batter into the loaf pan and bake for 50-60 minutes or until a toothpick comes out clean.
  7. Cool before slicing.

Notes

  • Squeeze excess moisture from zucchini before using.
  • Adjust sugar for a less sweet bread.
  • Store in an airtight container for up to 3 days.
