Ingredients

  • 1 1/2 cups grated zucchini
  • 1/3 cup melted butter
  • 1 cup sugar
  • 2 eggs
  • 1/4 cup lemon juice
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp lemon zest

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Mix zucchini, butter, sugar, eggs, and lemon juice in a bowl.
  3. Combine flour, baking soda, salt, and lemon zest in another bowl.
  4. Gradually add dry ingredients to wet ingredients. Stir until just combined.
  5. Pour batter into prepared loaf pan. Bake for 50-60 minutes.
  6. Cool in pan for 10 minutes before transferring to a wire rack.
