A hearty potato salad packed with bacon, cheese, and green onions for extra flavor.
Ingredients

- 2 lbs potatoes, peeled and cubed
- 6 slices bacon, cooked and crumbled
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 2 green onions, chopped
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Boil potatoes in salted water until tender, about 10-12 minutes. Drain and let cool.
- In a large bowl, mix sour cream, mayonnaise, salt, and pepper.
- Add cooled potatoes, bacon, cheese, and green onions to the bowl.
- Gently toss until evenly coated.
- Chill for at least 1 hour before serving.
Notes
- For extra crunch, add chopped celery.
- Substitute Greek yogurt for sour cream if preferred.
- Best served cold.
