Description

Make-ahead giblet gravy is a rich, savory sauce perfect for holidays or special meals. You can prepare it in advance to save time.


Ingredients

Scale
  • 1 turkey neck and giblets (liver, heart, gizzard)
  • 4 cups chicken or turkey stock
  • 1 small onion, chopped
  • 1 celery stalk, chopped
  • 1 carrot, chopped
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried thyme

Instructions

  1. Place the turkey neck and giblets in a pot with stock, onion, celery, and carrot. Bring to a boil.
  2. Reduce heat and simmer for 1 hour, skimming foam as needed.
  3. Strain the broth and chop the giblets finely.
  4. Melt butter in a saucepan over medium heat. Stir in flour to make a roux.
  5. Cook the roux for 2 minutes, stirring constantly.
  6. Gradually whisk in the strained broth until smooth.
  7. Add the chopped giblets, salt, pepper, and thyme.
  8. Simmer for 10 minutes, stirring occasionally, until thickened.
  9. Cool and refrigerate until ready to use. Reheat gently before serving.

Notes

  • Store in an airtight container for up to 3 days.
  • Reheat on low heat to prevent separation.
  • Add extra stock if the gravy thickens too much when reheating.
