- 1 cup basmati rice
- 1 ripe mango, diced
- 1 cup coconut milk
- 1 cup water
- 1 tbsp sugar
- 1/4 tsp salt
- 1 tbsp shredded coconut (optional)
Instructions
- Rinse the rice until water runs clear.
- In a pot, combine rice, coconut milk, water, sugar, and salt.
- Bring to boil, then reduce heat to low and cover.
- Cook for 15 minutes until liquid is absorbed.
- Remove from heat and let sit covered for 5 minutes.
- Fluff rice with fork and mix in diced mango.
- Garnish with shredded coconut before serving.
Notes
- Use ripe but firm mangoes for best texture.
- Adjust sugar to taste depending on mango sweetness.
- For richer flavor, toast shredded coconut before garnishing.
