Description

A tropical and flavorful dish combining sweet mangoes with creamy coconut rice.


Ingredients

  • 1 cup basmati rice
  • 1 ripe mango, diced
  • 1 cup coconut milk
  • 1 cup water
  • 1 tbsp sugar
  • 1/4 tsp salt
  • 1 tbsp shredded coconut (optional)

Instructions

  1. Rinse the rice until water runs clear.
  2. In a pot, combine rice, coconut milk, water, sugar, and salt.
  3. Bring to boil, then reduce heat to low and cover.
  4. Cook for 15 minutes until liquid is absorbed.
  5. Remove from heat and let sit covered for 5 minutes.
  6. Fluff rice with fork and mix in diced mango.
  7. Garnish with shredded coconut before serving.

  • Use ripe but firm mangoes for best texture.
  • Adjust sugar to taste depending on mango sweetness.
