Description

A fresh and healthy Mediterranean broccoli salad packed with flavor and nutrients.


Ingredients

Scale
  • 2 cups broccoli florets
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Steam broccoli florets for 3 minutes, then cool.
  2. Combine broccoli, tomatoes, red onion, and olives in a bowl.
  3. Whisk olive oil, lemon juice, oregano, salt, and pepper.
  4. Pour dressing over the salad and toss gently.
  5. Sprinkle feta cheese on top.
  6. Serve chilled.
