Ingredients

- 1 cup couscous
- 1 1/4 cups vegetable broth
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1/4 cup Kalamata olives, sliced
- 1/4 cup feta cheese, crumbled
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Bring vegetable broth to a boil in a saucepan.
- Remove from heat, stir in couscous, cover, and let sit for 5 minutes.
- Fluff couscous with a fork and transfer to a large bowl.
- Add cucumber, tomatoes, red onion, olives, and feta cheese.
- Drizzle with olive oil and lemon juice.
- Sprinkle with oregano, salt, and pepper, then toss gently.
- Serve warm or chilled.
Notes
- Use whole wheat couscous for extra fiber.
- Add grilled chicken or chickpeas for protein.
- Store leftovers in an airtight container for up to 3 days.
