Description

Ingredients

  • 1 cup couscous
  • 1 1/4 cups vegetable broth
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Bring vegetable broth to a boil in a saucepan.
  2. Remove from heat, stir in couscous, cover, and let sit for 5 minutes.
  3. Fluff couscous with a fork and transfer to a large bowl.
  4. Add cucumber, tomatoes, red onion, olives, and feta cheese.
  5. Drizzle with olive oil and lemon juice.
  6. Sprinkle with oregano, salt, and pepper, then toss gently.
  7. Serve warm or chilled.
