Description
A refreshing pasta salad perfect for Memorial Day gatherings.
Ingredients

- 16 oz pasta (rotini or penne)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup black olives, sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Cook pasta according to package instructions. Drain and rinse with cold water.
- In a large bowl, combine pasta, cherry tomatoes, cucumber, red onion, olives, and feta.
- In a small bowl, whisk olive oil, red wine vinegar, salt, and pepper.
- Pour dressing over the pasta mixture and toss to coat.
- Add fresh basil and gently mix.
- Chill for at least 1 hour before serving.
Notes
- You can add grilled chicken or shrimp for extra protein.
- Store leftovers in an airtight container for up to 3 days.
