Description

A refreshing pasta salad perfect for Memorial Day gatherings.


Ingredients

  • 16 oz pasta (rotini or penne)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup black olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Cook pasta according to package instructions. Drain and rinse with cold water.
  2. In a large bowl, combine pasta, cherry tomatoes, cucumber, red onion, olives, and feta.
  3. In a small bowl, whisk olive oil, red wine vinegar, salt, and pepper.
  4. Pour dressing over the pasta mixture and toss to coat.
  5. Add fresh basil and gently mix.
  6. Chill for at least 1 hour before serving.

  • You can add grilled chicken or shrimp for extra protein.
