Ingredients

- 1 whole chicken, cut into pieces
- 8 cups water
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 potatoes, diced
- 1 zucchini, sliced
- 1 cup corn kernels
- 2 garlic cloves, minced
- 1 tsp cumin
- 1 tsp oregano
- Salt and pepper to taste
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Place chicken pieces in a large pot and cover with water. Bring to a boil.
- Skim off any foam that rises to the surface.
- Add onion, garlic, cumin, oregano, salt, and pepper. Simmer for 30 minutes.
- Add carrots, celery, potatoes, zucchini, and corn. Cook for another 20 minutes.
- Remove chicken pieces, shred the meat, and return to the pot.
- Adjust seasoning and serve hot with cilantro and lime wedges.
