- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/2 cup crumbled cotija cheese
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper
- 1 lime, juiced
- 1/4 cup chopped cilantro
- 2 cloves garlic, minced
- Salt to taste
Instructions
- Heat a skillet over medium heat. Add corn and cook for 5-7 minutes until slightly charred.
- In a bowl, mix mayonnaise, sour cream, cotija cheese, chili powder, smoked paprika, cayenne, lime juice, garlic, and salt.
- Add the cooked corn to the bowl and stir to combine.
- Garnish with extra cotija cheese and cilantro.
- Serve warm with tortilla chips.
