Ingredients

- 4 cups corn kernels (fresh or frozen)
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/2 cup cotija cheese, crumbled
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/4 tsp garlic powder
- 1 lime, juiced
- 2 tbsp fresh cilantro, chopped
- 1 jalapeño, finely diced (optional)
- Salt to taste
Instructions
- In a large bowl, mix mayonnaise, sour cream, chili powder, smoked paprika, garlic powder, and lime juice.
- Add corn kernels, cotija cheese, cilantro, and jalapeño (if using). Stir well.
- Season with salt to taste.
- Chill for at least 30 minutes before serving.
- Garnish with extra cheese, cilantro, and a sprinkle of chili powder.
Notes
- Use grilled corn for a smoky flavor.
- Adjust spice level by adding more or less jalapeño.
