- 8 oz pasta (penne or fusilli)
- 2 cups corn kernels (fresh or frozen)
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 lime (juiced)
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/4 cup cotija cheese (crumbled)
- 2 tbsp cilantro (chopped)
- 1 clove garlic (minced)
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and let cool.
- In a large bowl, mix mayonnaise, sour cream, lime juice, chili powder, smoked paprika, garlic, salt, and pepper.
- Add cooked pasta and corn kernels to the dressing. Toss to coat evenly.
- Garnish with crumbled cotija cheese and chopped cilantro.
- Refrigerate for at least 30 minutes before serving.
Notes
- For extra flavor, grill the corn before adding to the salad.
- Substitute feta cheese if cotija is unavailable.
- Adjust chili powder to taste for more or less heat.
