Description

A creamy and spiced pumpkin pie with a buttery crust, inspired by Milk Bar’s signature dessert.


Ingredients

  • 1 1/2 cups pumpkin puree
  • 3/4 cup heavy cream
  • 3/4 cup whole milk
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 3 large eggs
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/2 tsp salt
  • 1 pre-baked pie crust (9-inch)

Instructions

  1. Preheat oven to 350°F.
  2. Whisk pumpkin puree, heavy cream, milk, and sugars in a bowl.
  3. Add eggs one at a time, mixing well after each.
  4. Stir in cinnamon, ginger, cloves, nutmeg, and salt.
  5. Pour filling into the pre-baked crust.
  6. Bake for 50-60 minutes until center is set.
  7. Cool completely before slicing.

Notes

  • Use canned pumpkin or homemade puree.
  • Blind bake the crust before filling for a crisp base.
  • Let the pie cool to room temperature before serving.
