Mini Chicken Quesadillas are a quick and delicious snack or appetizer. They’re crispy, cheesy, and packed with tender chicken and flavorful spices.

- 2 cups cooked chicken, shredded
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 1 tsp taco seasoning
- 8 small flour tortillas
- 1 tbsp olive oil
Instructions
- In a bowl, mix chicken, cheeses, bell peppers, onions, and taco seasoning.
- Place a spoonful of the mixture on half of each tortilla.
- Fold the tortillas in half and press lightly.
- Heat olive oil in a skillet over medium heat.
- Cook the quesadillas for 2-3 minutes per side until golden and crispy.
- Slice into wedges and serve warm.
Notes
- Use leftover rotisserie chicken for convenience.
- Add jalapeños for extra heat.
- Serve with sour cream or guacamole.
