Description

Mini lemon tarts are sweet, tangy, and perfect for any occasion. They feature a buttery crust filled with smooth lemon curd.


Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup granulated sugar
  • 1 egg yolk
  • 1 tbsp ice water
  • 1 cup lemon curd (homemade or store-bought)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix flour, butter, and sugar in a bowl until crumbly.
  3. Add egg yolk and ice water, then knead into a dough.
  4. Roll out the dough and cut into small rounds to fit tart molds.
  5. Press dough into molds and prick with a fork.
  6. Bake for 10-12 minutes until golden.
  7. Let cool, then fill with lemon curd.
  8. Chill for 30 minutes before serving.
  9. Dust with powdered sugar if desired.
