Description

Delicious mini quiches with spinach, perfect for breakfast or brunch.


Ingredients

Scale
  • 1 cup fresh spinach, chopped
  • 4 eggs
  • 1/2 cup milk
  • 1/2 cup shredded cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pre-made pie crust

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Roll out the pie crust and cut into small circles to fit a mini muffin tin.
  3. Press the crust circles into the muffin tin.
  4. In a bowl, whisk eggs, milk, salt, and pepper.
  5. Add spinach and cheese to the egg mixture.
  6. Pour the mixture into the crust-lined muffin cups.
  7. Bake for 15-20 minutes or until set.
  8. Let cool before serving.

  • Use fresh spinach for best results.
  • You can substitute cheese with your favorite variety.
  • Store leftovers in the fridge for up to 3 days.
