- 1 cup fresh spinach, chopped
- 4 eggs
- 1/2 cup milk
- 1/2 cup shredded cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pre-made pie crust
Instructions
- Preheat your oven to 375°F (190°C).
- Roll out the pie crust and cut into small circles to fit a mini muffin tin.
- Press the crust circles into the muffin tin.
- In a bowl, whisk eggs, milk, salt, and pepper.
- Add spinach and cheese to the egg mixture.
- Pour the mixture into the crust-lined muffin cups.
- Bake for 15-20 minutes or until set.
- Let cool before serving.

- Use fresh spinach for best results.
- You can substitute cheese with your favorite variety.
- Store leftovers in the fridge for up to 3 days.
