- 4 small corn tortillas
- 1/2 cup refried beans
- 1/2 cup Oaxaca cheese, shredded
- 1/4 cup thinly sliced cabbage
- 2 tbsp chopped tomato
- 2 tbsp chopped onion
- 1 tbsp chopped cilantro
- 1 tbsp vegetable oil
- Salt to taste
Instructions
- Preheat a skillet over medium heat.
- Brush both sides of the tortillas with oil and cook until crispy, about 2 minutes per side.
- Spread refried beans evenly on each tortilla.
- Sprinkle shredded Oaxaca cheese on top.
- Add cabbage, tomato, onion, and cilantro.
- Season with salt and serve immediately.
