Description

A delicious and moist loaf cake infused with apple cider and topped with cinnamon sugar for a doughnut-like flavor.


Ingredients

Scale
  • 1 1/2 cups apple cider
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. Simmer apple cider in a saucepan until reduced to 1/2 cup. Let cool.
  3. Whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a bowl.
  4. Cream butter and sugar until light and fluffy. Beat in eggs one at a time, then vanilla.
  5. Alternate adding flour mixture and buttermilk to the batter, starting and ending with flour.
  6. Fold in reduced apple cider until just combined.
  7. Pour batter into the loaf pan and bake for 50-55 minutes, or until a toothpick comes out clean.
  8. Let cool in pan for 10 minutes, then transfer to a wire rack.
  9. Brush with melted butter and sprinkle with cinnamon sugar.

  • Reduce apple cider for a more concentrated flavor.
  • Do not overmix the batter to keep the cake tender.
