Ingredients

- 2 1/4 cups all-purpose flour
- 2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tsp ground cinnamon
- 1 tsp ground ginger
- 1/2 tsp ground cloves
- 1/4 tsp ground nutmeg
- 3/4 cup unsalted butter, softened
- 1 cup brown sugar
- 1 large egg
- 1/4 cup molasses
Instructions
- Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
- Whisk together flour, baking soda, salt, cinnamon, ginger, cloves, and nutmeg in a bowl.
- In another bowl, beat butter and brown sugar until creamy. Add egg and molasses, mixing well.
- Gradually stir in the dry ingredients until combined.
- Roll dough into 1-inch balls, then roll in granulated sugar if desired.
- Place on baking sheets, spacing 2 inches apart. Bake for 8–10 minutes.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- Store in an airtight container for up to 5 days.
- For crispier cookies, flatten dough slightly before baking.
- Dough can be refrigerated for up to 2 days before baking.
