Description

A flavorful and tender Moroccan spiced lamb shoulder, slow-cooked with aromatic spices.


Ingredients

Scale
  • 1 (4-5 lb) lamb shoulder
  • 2 tbsp olive oil
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 cloves garlic, minced
  • 1 large onion, sliced
  • 1 cup chicken or beef broth
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Rub lamb shoulder with olive oil.
  3. Mix cumin, coriander, cinnamon, ginger, paprika, salt, and pepper. Coat the lamb evenly with the spice mix.
  4. Place sliced onion and minced garlic in a roasting pan. Set lamb on top.
  5. Pour broth into the pan.
  6. Cover tightly with foil and roast for 3.5-4 hours until tender.
  7. Remove foil and broil for 5 minutes to crisp the surface.
  8. Garnish with cilantro and mint before serving.

  • For extra tenderness, marinate the lamb overnight.
  • Adjust spice levels to taste.
