A flavorful and tender Moroccan spiced lamb shoulder, slow-cooked with aromatic spices.
Ingredients

- 1 (4-5 lb) lamb shoulder
- 2 tbsp olive oil
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 4 cloves garlic, minced
- 1 large onion, sliced
- 1 cup chicken or beef broth
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint
Instructions
- Preheat oven to 325°F (165°C).
- Rub lamb shoulder with olive oil.
- Mix cumin, coriander, cinnamon, ginger, paprika, salt, and pepper. Coat the lamb evenly with the spice mix.
- Place sliced onion and minced garlic in a roasting pan. Set lamb on top.
- Pour broth into the pan.
- Cover tightly with foil and roast for 3.5-4 hours until tender.
- Remove foil and broil for 5 minutes to crisp the surface.
- Garnish with cilantro and mint before serving.
Notes
- For extra tenderness, marinate the lamb overnight.
- Adjust spice levels to taste.
- Serve with couscous or flatbread.
