Description

A simple and nutritious mushroom and spinach frittata perfect for breakfast or brunch.


Ingredients

Scale
  • 6 large eggs
  • 1 cup fresh spinach, chopped
  • 1/2 cup mushrooms, sliced
  • 1/4 cup milk
  • 1/4 cup shredded cheese
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Heat olive oil in a skillet over medium heat.
  3. Add mushrooms and sauté for 3 minutes.
  4. Add spinach and cook until wilted.
  5. In a bowl, whisk eggs, milk, salt, and pepper.
  6. Pour egg mixture into the skillet with vegetables.
  7. Sprinkle cheese on top.
  8. Cook for 2 minutes, then transfer to the oven.
  9. Bake for 15 minutes or until set.
  10. Let cool slightly before serving.

Notes

  • Use any cheese of your choice.
  • Add diced onions or bell peppers for extra flavor.
  • Store leftovers in the fridge for up to 2 days.
