Ingredients

- 6 large eggs
- 1 cup fresh spinach, chopped
- 1/2 cup mushrooms, sliced
- 1/4 cup milk
- 1/4 cup shredded cheese
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- Heat olive oil in a skillet over medium heat.
- Add mushrooms and sauté for 3 minutes.
- Add spinach and cook until wilted.
- In a bowl, whisk eggs, milk, salt, and pepper.
- Pour egg mixture into the skillet with vegetables.
- Sprinkle cheese on top.
- Cook for 2 minutes, then transfer to the oven.
- Bake for 15 minutes or until set.
- Let cool slightly before serving.
Notes
- Use any cheese of your choice.
- Add diced onions or bell peppers for extra flavor.
- Store leftovers in the fridge for up to 2 days.
