Description

A rich and savory vegetarian version of the classic French dish, featuring mushrooms simmered in red wine and herbs.


Ingredients

Scale
  • 2 tbsp olive oil
  • 1 lb mushrooms, sliced
  • 1 onion, diced
  • 2 carrots, chopped
  • 3 garlic cloves, minced
  • 1 cup red wine
  • 2 cups vegetable broth
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add mushrooms and cook until browned. Remove and set aside.
  3. In the same pot, sauté onion and carrots until softened.
  4. Add garlic and cook for 1 minute.
  5. Pour in red wine and simmer until reduced by half.
  6. Stir in tomato paste, broth, thyme, and rosemary.
  7. Return mushrooms to the pot. Simmer for 30 minutes.
  8. Season with salt and pepper before serving.

Notes

  • Use cremini or button mushrooms for best results.
  • Pair with mashed potatoes or crusty bread.
  • For deeper flavor, use dry red wine like Pinot Noir.
