Ingredients

- 2 tbsp olive oil
- 1 lb mushrooms, sliced
- 1 onion, diced
- 2 carrots, chopped
- 3 garlic cloves, minced
- 1 cup red wine
- 2 cups vegetable broth
- 2 tbsp tomato paste
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add mushrooms and cook until browned. Remove and set aside.
- In the same pot, sauté onion and carrots until softened.
- Add garlic and cook for 1 minute.
- Pour in red wine and simmer until reduced by half.
- Stir in tomato paste, broth, thyme, and rosemary.
- Return mushrooms to the pot. Simmer for 30 minutes.
- Season with salt and pepper before serving.
Notes
- Use cremini or button mushrooms for best results.
- Pair with mashed potatoes or crusty bread.
- For deeper flavor, use dry red wine like Pinot Noir.
