Instructions

- Whisk eggs, salt, and pepper in a bowl.
- Pour the egg mixture into the pan over the mushrooms.
- Cook until edges set, then gently lift and tilt to let uncooked egg flow underneath.
- Sprinkle cheese if using, then fold the omelet in half.
- Cook for another minute, then slide onto a plate.
