Description
A creamy and flavorful Italian rice dish made with mushrooms, Arborio rice, and Parmesan cheese.

- 1 cup Arborio rice
- 4 cups vegetable broth
- 1 cup white mushrooms, sliced
- 1/2 cup white wine
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 2 tbsp butter
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil and butter in a large pan over medium heat.
- Add onion and garlic, sauté until soft.
- Add sliced mushrooms and cook for 3-4 minutes.
- Stir in Arborio rice and toast for 1-2 minutes.
- Pour in white wine and cook until absorbed.
- Gradually add vegetable broth, one ladle at a time, stirring constantly until absorbed.
- Continue until rice is creamy and tender (about 18-20 minutes).
- Remove from heat, stir in Parmesan cheese, and season with salt and pepper.
- Serve hot.
Notes
- Use warm broth for best results.
- Stir frequently to prevent sticking.
- Add extra broth if needed for desired creaminess.
