Ingredients

- 2 lbs potatoes, peeled and diced
- 1/2 cup mayonnaise
- 2 tbsp mustard
- 1/4 cup chopped celery
- 1/4 cup chopped onion
- 2 hard-boiled eggs, chopped
- 1 tbsp vinegar
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp paprika
Instructions
- Boil potatoes until tender, about 10-12 minutes. Drain and cool.
- In a large bowl, mix mayonnaise, mustard, vinegar, salt, and pepper.
- Add potatoes, celery, onion, and eggs to the bowl. Gently stir to coat.
- Sprinkle with paprika before serving.
- Chill for at least 1 hour before serving.
Notes
- Use Yukon Gold potatoes for best texture.
- Add chopped pickles for extra tang.
