Delicious chocolate muffins inspired by the Olympics, perfect for breakfast or snack.
Ingredients

- 1 1/2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 cup sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup milk
- 1/3 cup vegetable oil
- 1 egg
- 1 tsp vanilla extract
- 1/2 cup chocolate chips
Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a bowl, mix flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk milk, oil, egg, and vanilla extract.
- Combine wet and dry ingredients, stirring until just mixed. Fold in chocolate chips.
- Divide batter evenly into muffin cups, filling each 2/3 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Cool for 5 minutes before transferring to a wire rack.
Notes
- Store muffins in an airtight container for up to 3 days.
- For extra richness, add 1/4 cup melted butter instead of oil.
- Top with whipped cream or frosting if desired.
