- 2 cups diced rhubarb
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 tsp salt
- 1 tsp baking soda
- 1 egg
- 1/2 cup milk
- 1/3 cup vegetable oil
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×9 inch baking pan.
- In a bowl, mix flour, sugar, salt, and baking soda.
- In another bowl, whisk egg, milk, vegetable oil, and vanilla.
- Combine wet and dry ingredients. Fold in diced rhubarb.
- Pour batter into prepared pan. Bake for 35-40 minutes.
- Cool before serving.
Notes
- Use fresh rhubarb for best results.
- Dust with powdered sugar before serving.
- Store leftovers covered at room temperature.
