Description

A classic rhubarb cake recipe passed down from Oma. Simple, moist, and bursting with tangy rhubarb flavor.


Ingredients

Scale
  • 2 cups diced rhubarb
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 egg
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×9 inch baking pan.
  2. In a bowl, mix flour, sugar, salt, and baking soda.
  3. In another bowl, whisk egg, milk, vegetable oil, and vanilla.
  4. Combine wet and dry ingredients. Fold in diced rhubarb.
  5. Pour batter into prepared pan. Bake for 35-40 minutes.
  6. Cool before serving.

Notes

  • Use fresh rhubarb for best results.
  • Dust with powdered sugar before serving.
  • Store leftovers covered at room temperature.
